Mignon di capra is a small-sized salami, best eaten fresh. The secret of this delicacy, as for the other varieties of Mignons, lies in the mixture, where the game content is never less than 50%. To this pork is added, as well as salt, aromatic mountain herbs and natural flavours. The Mignons are then encased, hand-tied and sold in 100-gramme vacuum-packs. They are firm, substantial delicacies with an intense, aromatic flavour, best eaten with a full-bodied red mountain wine. INGREDIENTS: goat meat 55%, Italian pork 45%, salt, dextrose, saccharose, spices, natural flavourings, mountain herbs, antioxidant: E300, preservatives: E250-E252.
