Taleggio and all Italian Food products
The “Taleggio” is a fat Cheese, made of raw and soft paste, and produced with whole cow’s milk. It has a sweet and buttery flavour, which gets a little spicy only when it is really mature.
The “Taleggio” P.D.O. is produced in the provinces of Bergamo, Brescia, Como, Milan and Pavia, in the region of Lombardy, as well as in Treviso and in the Piedmontese province of Novara. In 1996, it obtained the Protected Designation of Origin.
Apparently, its production began in the “Taleggio” Valley, in the upper Bergamo, in the tenth-eleventh century, however, its name appears only around the first decade of 1800.
It is a fat cheese, made of raw and soft paste, and produced with whole cow’s milk. It has a sweet and buttery flavour, which gets a little spicy only when it is really mature.
In the kitchen it can be used in many ways: as an ingredient for various first courses and second courses, with salads or along with polenta. It should be served at room temperature in order to enhance its aroma and flavour.
It is conserved in the fridge, wrapped up into a damp cloth or into some paper that allows it to breathe. We also sell all Italian food products.
