Detailed introduction to Jam:
These products fill the shop with colours and perfumes: next to fresh vegetables, one can find products in glass jars, such as soft fruit jams, Strawberry jams, vegetable jams, and even jams made of wild berries, picked in the woods and alongside the streams of the mountains around. Many products are made following old local recipes, and using old and rare kinds of fruit, like dog rose, blackthorn, spurge laurel or hawthorn.
For the producers of these products it is fundamental to maintain and enhance the organoleptic properties and the content in vitamins and minerals of the produce they work with. To achieve this goal, a vacuum-cooking system is used, that allows to cook at low temperatures (65°-70° C), and for short amounts of time. This way, one can obtain products in which the original colour, taste and perfume of the fruit is not lost. Obviously, there is absolutely no use of thickening or Preservative additives for all the products.
