Made from wheat from Aichi Prefecture and traditional sea salt from Izu Oshima "Umi no Sei" without any chemical seasonings or preservatives, and carefully brewed naturally in an old-fashioned wooden bucket in the Nitto Jozo Ashikosekomi brewery in Okumikawa, Aichi Prefecture.
Ideal for home cooking such as oden, chawanmushi (steamed egg custard), osuimono (soup) and other dishes for entertaining.
Under the current law, we label this as a wheat brewing seasoning rather than soy sauce because it does not contain soybeans, but it is a revival of the old wheat sauce.
The ingredients for the dashi are "single bonito from Makurazaki," "mangrove from Hokkaido," and dried shiitake mushrooms from Japan. These carefully selected dashi ingredients are carefully boiled in a pot at our factory, and then combined with "Asakusekomi Mikawa Shirotamari" and "Mishu Mikawa Mirin" to make it rich in flavor.
All ingredients, down to the origin, are made from domestic ingredients. It can be used for various dishes such as soup, udon tsuyu, etc. just by diluting it.
"Shirotamari" is a very unique "Soy-Sause" produced by the particular ingredients and the way of production.
The usual production process of soy-sauce is as follows.
The first step is to add koji-mold to the mixed ingredients of the same amount of soy bean and wheat,and then to ferment them.
The 2nd step is to add the solution of salt to the stuff produced in the first step and to mature and ferment them,and rhen to get the pasty stuff called "moromi"
The final step of the process is to squeeze the moromi into liquid.
This squeezed liquid is called "soy-sauce".
The reason why we call this soy-sause "white" or "clear" is that it hardly has color like usual soy-sauce has and is transparent.
The ingredients of this clear tamari are wheat and the salt made from the qualified seawater and it does not contain any soy bean.
