Brewing Process
1.Polishing and steaming rice.Spreading Koji molt onto steamed rice.
2.Mixing malted rice,yeast and water,and leaving it for 6 days for the first fermaentation.
3.Mixing mashed sweet potato and water into the fermented mlted rice,and leaving it for 9days for the second fermentation.
4.Distilling
Highest point of proof of distillation is 76 Proof,prior to dilution and bottling.
5.After aging for 3 months , adding water and filtering ,followed by bottling.
