It took 250 straight hours for polishing rice into 9% of the original size, which is the minimum ratio among all Japanese sake.
The brewery is famous for its brand " HAKURAKUSEI " and " ATAGONOMATSU ". The young staff including the master brewer who has a unbelievable delicate palate, are passionate about sake brewing that is true to fundamentals. Their goal is the ultimate sake to enjoy with food, the very finest quality sake to accompany a meal.
The brewery has accomplished the splendid feat of achieving 9% of Seimaibuai or rice polish ratio, which means 91% of the oroginal size is pollished away.
