it is immediately taken to the freezing tunnels at a permanently controlled temperature.
As soon as the pigs are slaughtered in the adjoining slaughterhouse, the by-products arrive at the PPS cooling tunnel by means of an automatic line. After remaining there for 90 minutes, at a temperature of between 6º and 8ºC, they then go on to the dressing line for each of the products.
Once the product has been separated, cleaned and classed in boxes, it is immediately taken to the freezing tunnels at a permanently controlled temperature. In the tunnels the products are frozen at a temperature of -40º for 24 hours and then palletised and stored in refrigerated chambers at a temperature of 20º.
