Alaska king crab are harvested during the harsh Bering Sea winter from September to November. King crab are most commonly fished with large 600-700 pound steel-framed and nylon-webbed pots baited with herring and dropped to the ocean floor for 1-2 days. King crab can weigh up to 20 pounds, although the average size is 6-10 pounds. King crab are caught and held live on board the fishing vessel in tanks of fresh seawater until they are delivered to the processing plant or vessel where they are eviscerated, cleaned, cooked, and frozen. King crab are available year-round in a variety of convenient product forms from whole legs and claws, split legs, to select portions.
