The knepfle, cousin of the spatzle. As we already mentioned it in "Origin of pasta", knepfle are part of the same pasta family as spatzle. Made out of the same liquid dough, knepfle contain 6 fresh eggs per kilo of superior durum wheat semolina. Their texture is also irregular, but they are shorter and thicker than spatzle. You can prepare them the same way as the spatzle. Available in 500g packets and in conditioning for the catering industry.
