Kopi Luwak coffee comes from the Indonesian island of Sumatra, an areawell known for its excellent coffee. Also native to this area is asmall civit-like animal called Paradoxurus, the locals call them luwaks.These little mammals live in the trees and one of their favorite foodsis the red ripe coffee cherry. These animals eat the cherries, bean andall. While the bean is in the little guy's stomach, it undergoeschemical treatments and fermentations. The bean finishes its journeythrough their digestive system, and exits. The still-intact beans arecollected from the forest floor, cleaned, then roasted and ground justlike any other coffee.
The coffee beansin Kopi Luwak are effectively harvested by the civet cats, and they areas discerning as any coffee gourmet when it comes to selecting choicecoffee berries. Civet cats eat only the ripest and most succulentcoffee berries, and a consequence of this is that the excreted beansare of the highest quality, and aged to perfection.
These quality beans are further improved whilst in the civet catstomach, where a combination of digestive enzymes destroy proteinswithin the coffee beans that normally produce a bitter taste.
The resulting bean, once excreted and washed, requires only a lightroasting to produce a mellow, earthy flavor without the astringenttaste that would accompany the bean had it not passed through thedigestive tract of a palm civet cat.
The result is this Kopi Luwak coffee that is said to be like no other.It has a rich, heavy flavor with hints of caramel & chocolate.Other terms used to describe it are earthy, musty, and exotic. The KopiLuwak body is almost syrupy and it is very smooth.
