Mellow Sujiu is made of hundred years old cellar pool, which is fermented slowly after 180 days. The Baijiu produced in this way is more "soft" and mellow. After five years of storage in the pot-tery jar, the original Baijiu was transferred to the underground Baijiu sea covered with pottery plate and stored for another 10 years. After more than 15 years of natural aging, the Baijiu be-came more harmonious and "soft".
