Description: Originating in India, mangoes are one of the most cultivated fruits worldwide for their flavour, fragrance, and extremely attractive color. Mangoes grow in 35 to 40 meter trees with crowns up to 10 meters in diameter. Some types of mango trees can live and produce fruit for up to 300 years.
The color of the peel differs according to the variety, with ripe fruit having a wide spectrum of colors going from dark green, to yellow, to orange and dark red. They have a sweet smell and have one pit, flat and long in the middle of the fruit.
The Ecuadorian mango is well known for it's excellent quality and exquisite flavour. The Tommy Atkins mango is considered the best in terms of tolerance to handling and transportation. It is resistant to bumps and bruises and has a longer shelf life then the rest of the varieties. Their elevated tolerance to diseases permits the Tommy Atkins mango to be cultivated using less chemicals. The fruit is oval shaped, with a soft slightly waxy peel and a weight of between 16 and 24 oz. (450-700gr). Their color is orange with large parts dark red or crimson. The pulp is a little stringy, which gives it it's firm texture. It is a lemon yellow or a dark yellow color and the flavour is light and sweet.
The Kent mango is oval shaped with a soft waxy peel and a weight of between 24 and 32 oz. (700-900 gr.) They grow up to 13 cm long. The ripe fruit is a golden yellow color, with large parts dark red or crimson and numerous specks of yellow.
The pulp is dark orange color, soft, creamy, juicy and with an exceptionally sweet flavour. Besides being an excellent dessert, Kent mangoes are often used in juices and snacks.
Uses: Ripe Kent mangoes are used raw as a dessert, in juices, jams, ice creams, as well as in a great variety of dishes. Some dishes use unripe mangoes.
How do you cut your mango?
Hold the mango vertically and cut the pulp close to the pit on both flat sides with a sharp knife. Then scoop the pulp from the peel with a spoon and cut into desired pieces.
Storage: An unripe mango is firm and has a completely green peel. When ripe, mangoes have many colors from green to yellow to red. The fruit should give with light pressure and have a fruity aroma. Mangoes should be kept at room temperature.
