Sweet tender after meal alcohol.
As far as we know, mead is probably the drink of the Gods mentioned as Nectar and Ambrosia in Greek Mythology. The mead made by "Keshet Ba'har" (literally meaning "Mountain Rainbow") is produced with a unique process from Pure Honey, collected from the wild flora in the mountains around Jerusalem, a mere 10 minute drive from Bethlehem. Moreover, the honey is not processed nor heated when extracted from the combs, and thus retains all its well-known health promoting properties. To this pure honey we add fruits and fresh juice from apples, pomegranates-p1.html" target='_blank'>pomegranates or mulberries. After fermenting all the ingredients together and reaching 13% v/v alcohol, the resulting concoction is a burst of taste, complex bouquet and healthfulness.
After fermentation, the mead is aged with oak chips for several weeks, and then left to age for several more months. By the time Mountain Rainbow mead reaches the customer, it has already aged for a year or more. It will continue improving in the bottle for up to three years, when it is expected to reach its prime. We recommend to store in a cool dry place, and to drink chilled (8-10 °C).
Mead is produced in quite a few places in the world. However, in places such as Russia or Ethiopia, mead is fermented with the natural yeasts present in the honey and thus only reaches a maximum alcohol content of 6% ("honey beer"). This usually means that the mead often remains very/too sweet for most palates.

Keter ("crown")
Produced from Jerusalem mountain honey and freshly squeezed pomegranate juice.
Keisar ("Caesar")
A classic containing spring honey from the mountain flowers of the Labitae together with freshly squeezed apple juice. In Caesar gold, the apples themselves are freshly picked from our own organically grown grove. The full bouquet of the apples is retained in this mead.
Ahava ("Love")
This mead made only from pure honey is a slightly sweeter version that benefits even more than the other meads from a long aging period.
Hut Hashani ("Thread of Scarlet")
This brightly red, sensual mead made of honey and mulberries is our premium creation. In the extensive mead literature these beery containing meads are indeed regarded as the deepest meads with the utmost character.
