High Quality Mezcal
We pick the agave from the field. Only plants with more than 6 of age
The Jimadores peal the plants and deliver the hearts to the factory.
The agave hearts are put into a huge steam oven in order to be cooked.
Once they are cooked we squize the juice from the agave, some of it in a traditional way with a taona
and a dunky and some of it with a rustic machine.
The juice is mixed with distillate water and it is put to fermentation. We do not add anything but water.
This is where the sugar form the agave plants become into alcohol. (48 Hr aprox)
From there we filter the liquid and start the distillation process. The liquid is brought to a boiling state, the steam is cooled so the liquid after condensation becomes into mezcal. We apply twice this process.
That’s it. The liquid after distillation is Mezcal.
For the time being before the bottling process we store the mezcal in stainless steel containers and from there we bottle our product.
Part of the lot we store it into oak and Chestnut barrels so the mezcal becomes into aged Mezcal, we wait for at least a year before bottling the age mezcal version.
