GROWING NOTES: Low Guyot pruning, spacing of 4,500 vines per hec-tare; average production 60 quintals per hectare.
HARVEST: first week of September; hand picking, with careful bunch selection.
VINIFICATION: soft whole-berry press with destemming. Fermentation in stainless steel vats for about 7 days at the controlled temperature of 15°C, until it reaches 5% alcohol volume. Bottling succeeds in the month of December.
ORGANOLEPTIC CHARACTERISTICS:
Color: Brilliant, straw yellow.
Nose: intense, aromatic of grapes and citrus fruits, with evident notes of sage.
Flavor: Sweet, rich, creamy.
FOOD PAIRINGS: fruit, desserts, especially panettone and Hazelnut cakes.
