MOSCATO DI NOTO doc
The harvest period takes place between the beginning and the middle of October.
The maximum production is 8000 kgs per hectare.
The grapes are pressed and macerated in contact with the skins for 6 / 8 hours. They are then softly squeezed. It is followed by a fermentation at low temperature 16-18C that is stopped at around 10. 5c of Alcohol content to preserve a part of the natural sugars present in the grapes.
The Moscato is subsequently refined in steel tanks.
The color is deep straw-yellow.
It has a delicate aroma of Moscato with scents of candied fruit. The taste is sweet and balanced and has an excellent aftertaste with notes of candied fruit.
It is perfect with desserts, aperitif and goes wonderfully well with creamy
And strong cheese.
