Working Principle:
Vacuum cooling works by rapid evaporation of water from certain vegetables or other products under very low atmospheric pressures inside a vacuum chamber. Energy in the form of heat is required to change water from a liquid to a vapor state as in the boiling of water. At reduced atmospheric pressure in a vacuum chamber water boils at a lower than normal temperature.
Heat is required to boil or evaporate water. In vacuum pre-cooling this heat comes from the product being cooled. This includes field heat and heat from its respiration. The amount of water removed is roughly 1% of the initial product weight for each 10°C that it is cooled. Generally the moisture comes equally from all parts of the product being cooled and localized wilting is not a problem.

For fruits (like strawberries) and mushrooms, it is most important that the produce is cooled down very shortly after harvesting. Fresh cut flowers are a different field of application. Special systems adapted to processing aircraft containers have been made successfully in the past.
For pre-cooked convenience food special (stainless steel) vacuum cooling systems are needed in order to preserve quality and taste.
Components
The size of the chamber is defined by the amount of pallets you want to cool at the same time, and their individual dimensions. The size of the chamber will decide the number of vacuum pumps to be used. The (2-stage) Chinese DLT pumps excel in their sample but effective construction, and are very efficient in usage.
The evaporator (water catcher, special 'ColdMax ' technology, patent pending!) inside the vacuum chamber condenses the water vapour, and ensures only dry air leaves the vacuum chamber towards the pumps. Outside the chamber, the cold medium (R 404a) is cooled down by a refrigeration system. The compressor needed for this heat exchange process is supplied by bitzer (Germany) or by Hanbell (Tainwan).
