Lamb is typically sold fresh or frozen in Carcass or primal cuts. This business has developed over the years at the request of our suppliers and buyers. The usual source of supply is from Australia. In 1981, Purcell International pioneered the concept of air-freighting 'fresh, chilled' lamb carcasses form Australia. We were able to guarantee weights, fat cover and carcass definition within a very tight specification. We managed to guarantee internal carcass temperature upon delivery within a 5 degree range and therefore extremely low bacteriological levels which gave a significantly longer shelf-life. We also had a product without channel fat and because of superior trimming delivered a 12% yield improvement on domestic sources. Our peak year saw 3 million pounds imported without a single rejection.
