THE PLANT VANILLA

The genus Vanilla originated in Mexico and encompasses more than one hundred species of climbing plants, which reach over 35 meters, with alternating leaves that extend throughout its length. The leaves of vanilla are short, oblong, dark green and coriaceous, even fleshy in some species. The fruit of the vanilla is an elongated seed (10-20 centimetres) in the form of fleshy pod. It maturates gradually (from 8 to 9 months after flowering), becoming black with time and laying off a strong aroma. Each pod contains thousands of minuscule seeds, used to develop the flavouring.
