3.Solvent Effects : easily soluble in water,milk,hardly soluble in acetic acid ,propylene glycol,insoluble in ethanol,glycerol,oil

PH influence: stable in acidic conditions( red - purple) unstable in alkaline conditions with a molecular change from betain to yellow betaxnthins(yellow)

4.Light stability (under acidic conditions):slightly fade in color under strong light.

 

5.Antioxidant activity (under acidic conditions):excellent.

 

6.Metallic lons innteraction : hardly oxidized by metal ions,it can be oxidized into brown when ccontaining large amount of Fe3 nd Cu2
