GRAPES 100% Negroamaro
VINEYARD AREAS The Negroamaro grapes are selected from old vineyards
near SanDonaci, Salento in southern Puglia.
The traditional "Alberello" of vine plant method is employed.
HARVEST The grapes are manually and carefully picked in late September
VINIFICATION The grapes de stemmed, are chilled to 15° C and placed in
fermentation tanks. Fermentatio is carried out using selected yeasts at a controlled
temperature of 18°C. Frequent remontage and delestage are carried out to
maxmize extraction of aromas and gentle tannins After raking, malolactic
fermentation is induced.
AGEING A part of the wine is aged for 12 months in American oak barriques
Alcohol 13,00%
WINEMAKER'S NOTE Deep ruby red colour, with attrative fruit and Licorice
aromas. Dark red fruit, coffee and spice flavors on the palate lead to an intense
and early finish with bright berry flavors.
FOOD PAIRING UGOZANIER Negroamaro is ideal with pasta, roasted meats and
mature cheeses
