If you like spicy this is your ticket. Next Generation Organic Raw Milk Caribbean Cheddar combines cilantro, roasted garlic, cumin, jalapeno red peppers and Black Pepper for a different flavor sensation with each and every chew. Watch out, it has a kick at the end.
Our cheeses are true raw milk cheeses, and are never heated above 102°, protecting the natural Flavor, nutrition and digestive enzymes. These cheeses are aged a minimum of 60 days to meet FDA requirements. It is our sincere desire to produce Dairy Products that are not significantly altered by processing, that are nutritious, life-giving and are worth eating.
Next Generation Organic Dairy Products are produced using only the utmost care and attention to quality and nutritional value. Our cheeses are produced using only certified organic raw milk. Next Generation only heats their milk to 102 degrees, the same temperature that it was when it was produced and milked from the cow. This light heating is necessary for coagulation to take place in the cheese making process.

Storage: As for fresh cheeses, keep cold, in original packaging at 38 - 40°F. Try not to let the temperature vary too much or it will affect the shelf life and flavor of the cheese.
Flavor: Rich, nutty flavor becomes increasingly sharp with age. Smooth firm texture becomes more granular and crumbly with age with a distinct flavor all its own.
