For the production of all noodle types only pure Durum wheat semolina is used. Durum wheat semolina distinguishes itself against the cheaper soft wheat semolina mainly through its substantially higher amount of protein. The protein which is included in the Durum wheat semolina, also called "glue", is contrary to its misleading name, responsible for the fact that the noodles do not remain glued to each other during the cooking procedure but can be brought to the table "al dente". In addition, the amber-colored Durum wheat semolina is responsible for the beautiful yellow color of the noodles.
