Thenutmeg tree is a large evergreen tree, native to the Banda Islandsinthe Moluccas. Inside its apricot-like fruit lies a hard seed, thekernelof which is the spice nutmeg. The Portuguese were able to keepthesource of nutmeg and mace a close secret for nearly a century untiltheywere driven out of the Spice Islands by the Dutch. After theEnglishcaptured the Spice Islands in 1796, the British East IndiaCompanyintroduced the nutmeg tree to Malaysia, India, Sri Lanka, andthe WestIndies. Grenada, in the West Indies, now produces almost athird of theworlds nutmeg crop.

Culinary uses :In India, nutmeg is used more thanmace because of the latters highcost. It is an ingredient in Moghul dishes and the Arabs have long usednutmeg (and mace) to Flavour muttonand lamb dishes. Western cuisinemakes extensive use of nutmeg in bothsweet and savoury dishes.
Other uses :Nutmegand its extracts are extensively used in liqueurs, chewing gum,andconfectionery. Nutmeg oil is used in perfumes and ointments.
