A truly exceptionally rum. We selected a range of mouth-watering Molasses and raw cane sugar to form the starting delight of our rum. Remember how incredibly emotive those smells are: the whiff of hot treacle, syrup puds and much more. Dig deep and there is such complexity, dare I say… enough to challenge a fine malt.

Now molasses and raw cane sugar are not our yeasts best friends. They take a good old time to give themselves up for fermentation and even then it is a long fought battle. Some things are certainly worth waiting for and Old Salt Rum is one of them. When the final yeast bubbles have come to pass we wrestle the old devil into a naturally intended destiny, our fine copper still. The aromas are nothing short of salivary gland bursting.

The Old Salt slyphs off our still at about 71% ABV, making any centuries past naval distiller proud of us. She is cut with precision, leaving only a perfect heart.

The finishing touch is a splash of our home-made caramel, prepared with the finest blend of raw cane sugar; for the perfect combination of colour, aroma, mouth feel and emotion.

We knock back to a spot-on 42% ABV. She is a rare devil and we’d like everyone to have the chance to taste this incredibly fun and complex, rich sip… thus 50 cl bottles.

I prefer a straight sip, but over cracked ice provides a beam me up Scotty to some of the best parts of the Caribbean. Look for rich bitter treacle, silky smooth caramel, dark cocoa notes, Vanilla smoothness and a lingering smile.
