DanCong oolong is a popular treat from Guangdong Province. The hilly humid region from which it comes is most famous for this special tea, which is named after the legendary phoenix, the empress of birds in Chinese mythology. The leaves are oxidized and roasted during a complex process, which gives the tea a light subtly peachy flavor and helps it retain its freshness for over two years. The light honey-colored tea has a full flavor and can aid in the digestion of rich foods.

Steeping Instructions: Rinse and warm your teapot and cups with hot water. Fill your teapot or cup half full of tea pour 200o water to fill the pot. Steep for 1-2 minutes.
For subsequent infusions, increase the steeping time and water temperature
A clay or porcelain teapot is recommended.

| Brewing Guide: | Brew it in a gaiwan or in a Yixing teapot. Preheat vessel and cups with near boiling water (85-95°C or 185-200°F). Fill 1/3 to 1/2 of the volume with tea and add water and push off the bubbles with the lid as you cover and pour out this wash. Add more water, cover and infuse for 15-20 seconds, depending on taste. Pour tea into preheated cups and serve. Infusion can be repeated four or more times, increasing the infusion time as necessary. | ||

Phoenix (Feng Huang) Dan Cong is a select oolong tea from Guang Dong province and was a tribute tea in the Song Dynasty. The leaves are harvested from a strain of trees that have been selected for careful breeding as straight trunk trees. These trees have a single trunk that rises straight up and the branches form an umbrella, making harvesting the leaves particularly difficult. Pickers use tall ladders or must climb the trees to harvest the long leaves. According to its different flavors, Dan Cong teas have been divided into many types, such as Osmanthus, Peach, High Mountain A2 Class, Wu Shan Dong, Honey Orchid, etc..
