Panela is the sugarcane juice which, after successive boiling and evaporation, loses humidity and concentrates forming a soft and ductile mass that solidifies in blocks after cooling. To purify the fresh sugarcane juice, it must undergo a decanting process.
Panela is handmade and free from all chemical additives used in the manufacturing of sugar, which, when subjected to sulphatation, clarification and filtration, loses Molasses along with all the mineral salts, amino acids and vitamins contained in sugarcane juice and panela. 

Panela dissolved in water is used as NATURAL ENERGIZER (this is the secret of Colombian bike riders in high performance competitions in Europe), it is also drunk hot as a HIGH CALORIC POTENTIAL BEVERAGE.

80% sucrose and 10% to 12% fructose and glucose. 
The latter elements have a high biologic value and are not present neither in reduced sugar nor in refined sugar. The mineral salt content is 5 times higher than reduced sugar and 50 times higher than refined sugar. Its concentration is 1.5gr in 100gr. Panela contains considerable amounts of Potassium, Magnesium, Calcium, Manganese, Copper, and Phosphates.
It also contains traces of Fluorine and Selenium. It contains 1% Proteins and a wide range of vitamins, specially B group vitamins, such as B6, folic acid, Calcium Pantothenate, Inositol, B2, PP, H, in addition to its high energetic value.
