  All we produce comes from ecological/organic growing, and has the guarantee from the Andalusian Commitee for Ecological Agriculture since 1998, according to Rule C.E. 2092/91.

 

Most of our orchard is above 1,000 metres of altitude. It is at the limit at which olive trees can be grown at winter temperature. This risk factor for the tree itself turns into an attribute for harvesting olives. The clean atmosphere at this altitude improve both the solar radiation absorbed by the leaves and the maturing process, producing better fat contents in the fruits, better oleic acid and better taste for the resulting oils.

 

The olive variety is “Picual” and we extract the oil in a mill for making olive oil within the farm.
