Our oil is produced in a very simple procedure. But simple does not mean easy. In fact, a very few producers pay so much care and apply such strict rules. On the olive trees cultivated following the organic methods, we pick olives of the Carolea, Peranzana and Ogliarola varieties, that give a delicate oil, and olives of the Coratina variety, that gives a rustic oil. "We pick on the olive trees" means that we do not let the olives fall in order to gather them, later, on the ground. Our procedure is hard and expensive, but it is the only one that assures the harvest at the exact ripening point, not one more day. On the very day of the harvest we take the olives to the mill. We can do it only because we have a limited production. The olives are obviously milled just like that. The oil so obtained is bottled without being filtered, in order to keep it genuine. At this point, with a small quantity of olives and lemons, we also produce a very particular version that comes from our traditions: lim¨°n oil. In this way the Puglissima oil is born. Rare and precious.
