Many oils are popular because of their monounsaturated fats; others for their polyunsaturated fats. Organic oils are also useful for various food applications including baked goods, dressings, and fried products. Powdered oils are often used for mixes (baking mixes and powdered nutritional blends). Palm oil in particular is a substitute for hydrogenated shortening (because it is solid at room temperature and has a higher melting point).
Since organic oils are mechanically pressed, no hexane chemicals are used during processing.
Oil products should be fresh, with low peroxide values. The product must be properly refined to ensure that its quality and structural integrity is maintained.
