Brief introduction: Pine seeds contain, depending on species, between 10–34% protein, with Stone Pine having the highest content.They are also a source of dietary fiber. When first extracted from the pine cone, they are covered with a hard shell (seed coat), thin in some species, thick in others. The nutrition is storembryo (sporophyte) in the centre.

Usage and function:
Pine seeds can be pressed to extract Pine Nut oil, which is valued both for its mild, nutty Flavour and its health benefits such as anti-inflammatory and antioxidant action. Pine seed oil has a relatively low smoke point, and is therefore not generally used during cooking. Rather, it is added to foods for "finishing", to add flavor. Pine seed oil is also reportedly an excellent bread preservative when a small amount is added to the dough. According to a study by Lipid Nutrition, the pinolenic acid contained in pine nut oil can help curb appetite by stimulating the release of cholecystokinin, a hormone that functions as an appetite suppressant.In addition to suppressing appetite, pine seed oil also can reduce LDLs, yielding further health benefits.
