Introduction: Quinoa or Quinua, which is a word of Quechua origin, is a pseudocereal native to The Andes of Peru and other South American countries. It was named "The Mother Grain" by the Incas. Each year, at a special ceremony, the Inca planted the first seeds of the season and during the solstice the priests carried golden vessels filled with Quinoa which were offered to the Inti, the Sun God. In present, Quinoa is considered the food that possesses the ideal balance of Protein and nutrients for humans. Even NASA chooses Quinoa as food for their space travels.

Description: Quinoa is an annual development food plant; dicot usually reaches a height of 1 to 3 m. The leaves are broad and polymorphous (different forms in the same plant). The central stem includes lobed, brittle leaves. The stem may or may not have branches, depending on the variety or density of the planting. The flowers are small and lack petals. They are usually self-fertilizing hermaphrodite. The fruit is dry and is approximately 2 mm in diameter (250 to 500 seeds / g), surrounding the calyx, which is the same color as the plant.

Origin: Quinoa was domesticated and cultivated about 5000 years ago in the Andes. In Peru, it grows from sea level up to 4000 m in the Andes, although the common height is from 2500 meters above sea level.

Importance of Quinoa: Quinoa is one of the foods that contains all the essential amino acids for humans. This makes Quinoa a very complete, superior food and easy to digest, recommended for daily consumption. The Quinoa grain contains more protein than any other. The average protein content in the Quinoa grain is 16%, but it can reach up to 23% (more than double than any other). It is also rich in fiber, iron, calcium, phosphorus, Vitamin B complex and vitamin E. It contains from 4% to 9% of fat, which half is omega-6 (linoleic acid), essential for the human diet. Because of its high digestibility, is an excellent tonic for the feeding of the convalescent sick people and malnourished children.
