Our Spaghetti is completely made up of italian organic white durum wheat.
The high specific weight of hard wheat used to produce the Semolina is the first sign of quality.
Grown mostly in the southern part of Italy, plenty of sun gives to our hard wheat a second label of quality; finally, we mill the wheat to use the semolina only and not the second choice: “semolato” like some of our competitors.The higher quality of semolina gives a better pasta. We have to use cylinder mills since stone mills produce a far to thin flour which inevitably would be mixed with the semolato (second choice) and therefore have a higher content of ashes.
The semolina is processed according to the EC reg. 834/07 which define what is biological white pasta.
