Grapes, picked 10 days before their complete ripening in order for the tastiness to be exalted by a good remaining acidity. After a slight maceration (10 hours) on the peels, the must is immediately sent under way to the sparkling process and rests there for a few months. It has a vivid red colour, a bouquet of rosebuds and soft fruits, a harmonious full-bodied taste. It is excellent when accompanying the best salami and cold pork meats of Parma, however it is a complete wine and suitable for any meal.
