Iberian ham comes exclusively from Iberian pig. The main features that distinguish his quality are derived from the purity of the breed, the breeding in extensive regime of freedom of the Iberian pig, in wooded pastures where they can move, feed and cure the ham. Iberian ham can be distingue from the rest of hams by its texture, aroma and taste, varying depending on the food and exercise of the animal.
Iberian of “Cebo” is the one fed in the meadows only with feed.
Elaboration:
After slaughter of pigs, hams and shoulders are salted, remaining salt between 30 and 60 days (depending on weight), then moved to natural drying with a rigorous control of ventilation and temperatures between 15º and 30ºC.
After a preliminary classification according to their weight, hams go to the cellar where they conclude the last phase of healing, maturing slowly. Remain between 24 and 36 months, with temperatures ranging between 15º to 20ºC and relative humidity around 60~80%.
