Palmito, also referred to as the "heart of the palm" or "millionaires salad", is a vegetable harvested from the inner core of the acai (Euterpe oleracea) palm tree. The vegetable is quite rare as the palm needs to be cut down in order to extract it and only certain parts of the tree are used for the palmito. The "heart of palm" is often eaten in salads or on it's own and offers a truly exceptional flavor and nutritional contents.
