VINEYARD:
Looking for new aromas, the wineyard blend three grape varieties. It grows on schist and quartz terroir to accentuate the fruity taste and the spicy character, moreover of a great structure and complexity.

GRAPE VARIETY:
75% Cabernet Franc, 15% Pinot, 10% Gamay

VINIFICATION:
Harvesting takes place when the grapes of the various varietals overripe (the seeds have a Hazelnut taste). The sorted grapes are carefully transferred to the vats, with some 30% of the grapes bursting. Pre-fermentation cold maceration at 8°C during 6 days allows for a smooth extraction of the tannins and more intense aromas. Next follows alcoholic fermentation at 20°C, as well as malolactic fermentation. Blending is done following the fermentations. The wine is aged in vats during 6 months, with a few rackings.
