In Piedmont, production of
pears is limited to the provinces of Cuneo, Turin and Alessandria.Alongside the universally known Abate Fétel, William and Conference, other important varieties for cooking are Madernassa and Martin sec. These are old local varieties typical of traditional pear growing in Piedmont and still highly appreciated on the main markets of northern Italy. With just four calories per 100 g of pulp and a high potassium content, the pear is an exquisite form of fuel to help those who go in for sport or dynamic life styles. The pear also plays an important part in low calorie diets due to its high dietary fibre content. This accelerates the passage of food through the intestine and therefore reduces the capacity for absorption. The fibre, acting as a "sponge", absorbs and eliminates the toxins present in our organism and enables the pear to act as a genuine garbage collector, working silently and gently.
