PECORINO TOSCANO DOP STAGIONATO
This is the classic aged PDO sheep’s milk Cheese, made with pasteurized sheep’s milk with selected local milk enzymes, rennet and salt. This cheese is aged for at least 120 days, after which the TUSCAN PECORINO consortium brands its mark on the external part of the cheese. It is pale straw-colored with small holes throughout. Once mature its rich Flavors and slight bite render it an excellent choice both for the table and for grating. The PDO TUSCAN PECORINO, with its soft body, is without doubt the shining star of our dairy.

 

The Tuscan Maremma area is a harsh land with a varied countryside, able to bring out the most vivid of emotions in its visitors with its rolling hills that dissolve from the dark green shades of the forests to the deep blue color of the sea.
