Important Facts: Purple Corn is a unique corn which is only produced in Peru, containing as its main active principle anthocyanin, also phenolic substances, and other very important phytochemicals for the organism. It has been widely used by ancient people in Peru, due to its antioxidant properties and because it is a natural food coloring. It is currently used to prepare a delicious exotic drink called "chicha morada," and also a popular dessert called "mazamorra morada," both acknowledged to be very nutritive.
Description: It is a solid-stemmed plant, upright which can reach heights between 1 m and 4 m, depending on the variety. At the top there is a plume-shaped bloom, the stalks grow in the axils of the large and elongated leaves, Later on the cob they will become full of grains formed in rows. The Purple Corn cob is the one with the concentrate of anthocyanins, which is the natural colorant.
Origin: It grows in The Andes of Peru, scattered and cultivated also on the coasts of the Peruvian territory, long before The Incas epoch. Currently the major production areas are Lima, Arequipa and Cajamarca.

Active Principles: anthocyanins, polyphenols, cyanine-3glucose, phenol compounds, proteins, carbohydrates, fiber, ash, calcium, phosphorus, iron, retinol, thiamin, riboflavin, flavonoids, niacin, reduced ascorbic acid.
Properties: antioxidant, promotes the reduction of cholesterol, stabilizes and protects the capillary arteries, supports the regeneration of tissue, promotes blood flow, avoids the presence of colon cancer, promotes lower bloof pressure, combats obesity, combats diabetes, promotes Collagen formation.
