Pineapple jam is made from mature pineapple fruit which is boiled with sugar with additional substance until becomes thick and then freeze.
Important aspect which needs attention is fruit selection. Pineapple must be perfectly ripe. The young fruit contains acids and could affect jam quality. It is unsuitable if it is because its contain large amount of water and unattractive colour.

Method to Make Pineapple Jam
| 1. | Extract the ripe Pineapples skin, eye and pith. Then washed and crushed. |
| 2. | After that, heat pineapple slowly in large pot. |
| 3. | Mixed Pectin with sugar before added into the pot contains the pulps which have been heated. Put in the mixture bit by bit to avoid cloddy. |
| 4. | Stir the mixture until almost concentrated where sugar content show concentration which achieves 68ºBx. |
| 5. | Mixed Citric acid and stirred until mixture is blended. Jam must have enough acid composition namely pH 2.83.4. |
| 6. | After cooked, jam needs to be bottled while still hot to prevent the jam from freezing. |
| 7. | Bottles had been filled must be tight seal immediately. This is to create partial vacuum. This will reduce microorganism pollution on jam |
