The Grapes harvested in the first week of September are de-stemmed, lightly pressed and

then left to ferment in stainless steel vats for about two weeks, at a controlled temperature.

Once the optimum alcohol content has been reached, the wine is filtered and left to rest in

the cellar until the time for bottling .
