Wine only produced in the municipality of Oliva Gessi, place with a calling for great white wines production; the morphology of the calcareous soil, the good altimetry and the right exposure make this wine unmistakable. The late harvest identifies the Company's personalization and confers uniqueness to the wine.

FORM OF BREEDING Cordon-trained and spur-pruned, 4,000 plants/ha.
HARVEST End of September/beginning of October, manual harvesting with wooden crates cassette.
VINIFICATION White-winemaking process, with very soft pressing; fermentation in stainless steel for about 15 days at a controlled temperature. Ageing in stainless steel vats.
REFINEMENT IN BOTTLE 6-7 months before selling.
SERVING TEMPERATURE 14??-15??C.
ALCOHOLIC GRADATION 13.5%-14% depending on the vintage.
