Pizza dough
1 lb flour
1 oz. yeast
2 tbs extra virgin olive oil
Topping
2 lbs white onions
8 tbs grated Pecorino Romano
3 tbs chopped parsley
1 tbs marjoram and thyme leaves
4 tbs extra virgin olive oil
Mix the flour with a pinch of salt, a little of the olive oil, and the yeast dissolved in a glass of tepid water. Knead into a smooth dough and roll into a ball. Place the dough in a bowl and cover with a cloth and leave to rise for about 2 hours. Peel and lightly boil the onions, drain them well, slice thinly and set aside. Knead the dough again, roll out and place on a greased baking tray and leave to rise again. Spread the olive oil, grated cheese, onions, marjoram and thyme on the pasta dough and season with salt. Bake in a moderately hot (200?? F) oven for about 30 minutes. Drizzle with parsley and serve.
