Although a legal distinction doesn’t exist between industrial and handmade produced cachaça, we would like to point out, that the first one is produced through continuous distillation (similar to the production of Alcohol) with the addition of sugar.
The homemade one is produced through the distillation of the sugarcane must fermentation in copper stills, without any sugar addition.
The Cachaça from Minas- traditional and pure, may be defined as: a liquor with a alcohoholic graduation from 38% to 54% vol., under a temperature of 20 degrees Celcius .
It corresponds to the middle part of the distillation process, known as “core”, which is the distilled part, corresponding to 80% of the total volume. The remaining parts (20%) called “head” and “tail” are discarded.
