Marudizu Soy sauce VS Das-si-kakodaizu soy sauce
There is significant difference between Marudaizu soy sauce and mass-produced ordinal soy sauce.
The both soy sauces are using soybeans, however, the difference is soybeans. Mass-produced ordinal soy sauce use Das-si-kakodaizu that is soybeans removed its oil. Using Das-si-kakodaizu had been common for producing soy sauce in 50years, as an efficient process of producing soy sauce.
On the other hand, Marudaizu soy sauces use natural soybeans. Natural soybeans contain oils; so that the process of producing soy sauce is not as efficient as using Da-si kakodaize that after squeezed “Umami” from soybeans, need to remove oil from soybeans. However, some amount of oil remained in the soybeans during the brewing stage, so that the oil makes taste richer and better. This is the original style of producing soy sauce with long history.
Das-si-kakodaizu are almost 99% come from out side of Japan, and the most of them are GMO soybean.
