Pu-erh or Pu'er tea  is a variety of fermented  dark tea produced in  Yunnan  province, China. The most famous variety of this category of tea is Pu-erh from Yunnan Province, named after the trading post for dark tea during imperial China.

A convex knob-shaped tea, its size ranges from 3g to 3 kg or more, with 100g, 250g and 500g being the most common. The name for  tuocha  is believed to have originated from the round,  top -like shape of the pressed tea or from the old tea shipping and trading route of the  Tuo River . In ancient times,  tuocha  cakes may have had holes punched through the center so they could be tied together on a rope for easy transport.

Puerh Tea, Puer, Pu’er, Pu’er tea, Puer or Bolay tea is a broad leaf tea traditionally harvested from wild tea trees.   While white, green, oolong, black, and puerh teas all are harvested from the Camellia sinensis plant, Puerh Tea is brewed from the leaves of Camellia sinensis var. assamica .  Puerh Tea predominantly comes from the Southern Yunnan province of China.  Puerh (pronounced POO-air) is one of China’s most famous medicinal teas and has been enjoyed for over one thousand years.

The large leaves are either oxidized (cooked) or left raw, however even raw, or green, puerh tea is briefly fired to stop enzymatic activity in the leaves.  Puerh tea is sold as loose leaf tea or pressed into cakes and other shapes.  Like wines, Puerh tea is designated by the year and production location.  The leaves of the oldest trees are most sought after.  Correctly brewed Puerh tea has a rich, earthy flavor that is in a class of its own.  It has an extremely long shelf life and, depending on the variety, may be suitable for drinking at 50 years after harvest and beyond. Properly processed, aged puerh from high quality trees can increase significantly in value over time.  In recent years, this has led to higher prices for rarer puerh teas.  However, it appears higher prices fueled by speculation have subsided for the time being.

Many medicinal properties are ascribed to puerh tea and it is believed to be suitable for people of all ages.  While the tea is frequently purchased to aid in weight loss and to combat the ill effects of excessive alcohol consumption, studies indicate that the tea can reduce blood cholesterol.

Brewing

1. Put Pu 'er tea in the cup, about 10 grams (covered cup bottom, a slightly higher).
2. Add boiled water into the filter and the water over the tea.
3. For a moment, take out the filter bowl, put out the first tea liquid.
4. Once again put into the boiling water, cover the tea. Cover with lid. Let stand for about 20 seconds.
5. Open the lid; take out the filter cups, slightly drops to tea juice, as for the lid.
