General introduction of tea in Yunnan Province:
Yunnan Province boasts the largest tea growing land area and the third highest annual tea yield in China. There are 129 counties in Yunnan Province, and more than 110 of them produce tea. More than 11,000,000 people are involved in Yunnan's tea industry including more than 6,000,000 tea farmers. Tea plantations cover an area of 1,980km² with a 112,000MT annual yield and a production value of USD938,000,000 in 2005.

According to a sample examination on tea by the National Quality Supervision Department, tea produced in Yunnan Province contains the smallest quantity of pesticide that conforms to the latest European standard and is competitive in the market in China and Overseas.
The content of tea polyphenols and catechu contained in broad-leaf tea is 30-50% higher than that in small-leaf varieties. In addition, the composition proportion of catechu and other effective ingredients enhances the taste. Superior quality tea leaves create the special character of pu'er tea.

What is pu'er tea:
Pu'er tea has a history of over 1,700 years, which may be traced back to the East Han Dynasty. Pu'er tea is a loose or pressed tea with a post-fermentation aging process. It is characterized by its reddish brown tea leaf color, deep red infusion color, special aroma and rich flavor.

Making pu'er tea:
1) Temperature of water: 100°C (boiling)
2) The proportion of tea to water is 1:50
3) Water: pure water or spring water
4) Over-boiled water may reduce the oxygen, which will influence the activation

5) Steps:
a) Preparation: prepare the utensils and the pu'er tea
i) Warm and clear the utensil: pour boiled water into the utensil
ii) Place the pu'er tea into the utensil
b) Wetting: pour the boiled water into the tea pot
c) Steeping: steep the tea for a reasonable time
d) Filling: sift the tea leaves and pour tea into cups
