The "Caseificio Sociale Manciano" is a co-operative society founded in 1961 by the sheep farmers of the area who intended to promote the production of sheep's milk in the inland region of the province of Grosseto, an area where sheep farming has been traditionally for centuries one of the main economic activities. The co-operative now includes over 600 producers of sheep and cows' milk scattered over an area which covers seven local districts of the Province.
The "Caseificio" uses modern equipment combined with old traditional cheese-making methods to produce pure and mixed sheep's cheese whose flavours, from fresh and creamy to tasty and sharp for the classic mature Tuscan cheeses, are appreciated by Italians all over the country.
With their continual research, experimentation and commitment to the traditional principles which for centuries have regulated the dairy industry in Tuscany, the "Caseificio" has created an incomparable range of Manciano cheeses distinguished for their wholesome and excellent qualities which continue to satisfy the requirements of their ever-growing clientele.
