It is a kind of natural pigment extracted from purple sweet potato.It contains anthocyanins and flavones.The amaranthine Powder or liquid is soluble in water, Alcohol and solution of water and alcohol, but insoluble in oil and absolute alcohol.The PH of around environment can influence its color hue and stability. At pH 2.0-6.0, the color is red or amaranthine, at pH 7.0, it is blue:at pH above 7.0, it is unstable green.
Application: it can be used in the coloring or supplement of wine, carbonic acid drinks, juice drink, Jam and candy.
Storage: protected from light and heat,better to be stored in cool, dry and airproof conditions.
